Ingredients

For the Chicken:

• 2 boneless, skinless chicken breasts

• 1 teaspoon salt

• ½ teaspoon black pepper

• ½ teaspoon garlic powder

• ½ teaspoon Italian seasoning (optional)

• 2 tablespoons olive oil or butter


For the Alfredo Sauce:

• 4 tablespoons (½ stick) unsalted butter

• 4 cloves garlic, minced

• 2 cups heavy cream

• 1 cup grated Parmesan cheese

• ½ teaspoon salt (adjust to taste)

• ½ teaspoon black pepper

• ¼ teaspoon nutmeg (optional, but enhances flavor)

• 1 cup pasta water (reserved from cooking)


For the Pasta:

• 12 ounces fettuccine pasta

• Water for boiling

• 1 teaspoon salt

Preparation

Step 1: Cook the Chicken

1. Season the chicken breasts with salt, pepper, garlic powder, and Italian seasoning.

2. Heat olive oil (or butter) in a large skillet over medium heat.

3. Add the chicken and cook for 5-7 minutes per side until golden brown and cooked through (internal temperature should be 165°F).

4. Remove from the skillet, let rest for 5 minutes, then slice into strips.


Step 2: Cook the Pasta

1. Bring a large pot of salted water to a boil.

2. Add fettuccine and cook according to package instructions until al dente.

3. Reserve 1 cup of pasta water before draining the pasta.


Step 3: Make the Alfredo Sauce

1. In the same skillet used for the chicken, melt butter over medium heat.

2. Add minced garlic and sauté for about 1 minute until fragrant.

3. Pour in the heavy cream, stirring frequently. Let it simmer for 3-4 minutes.

4. Stir in the grated Parmesan cheese, salt, pepper, and nutmeg. Continue stirring until the cheese melts and the sauce is smooth.

5. If the sauce is too thick, add small amounts of the reserved pasta water to reach the desired consistency.


Step 4: Assemble the Dish

1. Add the drained pasta to the skillet with the Alfredo sauce, tossing to coat evenly.

2. Add the sliced chicken on top and mix gently.

3. Serve hot, garnished with extra Parmesan cheese and freshly cracked black pepper.
